The one job that funnily enough, never made me cry, was during my time teaching in New York at the International Culinary Center. I love to teach, inspire people and unlock the science behind baking & pastry, so you can create your own delicious goods! So love where you are, never stop learning and enjoy your life.

 I grew up in Somerset  England, on a small dairy farm. At an early age I was often found picking blackberries and raspberries off the bushes on the country lanes. That's how I got started baking. The farmers wife, she had taken a shine to me, would let me hang about in her kitchen. One day she caught me with my stash of berries and taught me how to make a Linzer tart, and that was it! I was off, Linzer tarts for everyone.
By 18 yrs old I was  an Assistant Pastry Chef at Santacafe in Santa  Fe, NM. Realizing that cooking and baking was something I really liked I started to study the culinary arts at the local community college. After finishing a year, I felt I needed to go to a big league school to earn a place at the table. I set my sights on Johnson & Wales University in Miami Florida, earning an Associates in the Culinary Arts in 1995.
I started working at the best restaurants I could find and learning as much as I could. But baking and pastry still called my name. 
In 1997 I moved to New York and started to work at Lespinasse, one of three 4 star restaurants in the city at that time. I started as a cook and quickly became the Assistant Pastry Chef. Next was France! 
That was 20 yrs ago, and I'm running out of room.  So my further adventures will have to be in person ;-), I look forward to sharing my favorite recipes with you and some secrets to making baking easier.

These delicious cookies are so simple, combining cream cheese with butter, produces a unique tenderness to this cookie, it will become your go to cookie dough for special occasions or gifts.

- oven digital scale electric mixer w/ paddle attachment 3 small to medium sized bowls sifter whisk plastic spatula sheet pan

Learning is fun, but a safe environment and good Wifi ensure a successful Experience!

The focus of all of our Experiences is learning in a fun, easygoing environment – but it’s not fun if we don’t have a smooth, safe adventure together. To set the stage for a successful Experience, please make sure you stock your kitchen with the necessary safety equipment in case of any accidents (smoke detector, a first aid kit, fire extinguisher or blanket, and know your emergency phone numbers!) and make sure your Wifi can support the class. Generally, if you can stream a video or movie on your laptop or computer, your Wifi should support one of our classes (and if you have any questions, please feel free to reach out to us for help!)
